I know, I know, I’ve been on a pumpkin overload lately. This blog should just change into a pumpkin fan blog, I swear. I still have so much pumpkin purée left, that’s my issue! My second issue (which is more so the first issue) is that I’m addicted to pumpkin everything now because of it. I recently discovered the glory of overnight oats and granola and I am hooked as ever.
This is going to be a quick little post about the best parfait, if you love pumpkin this ones for you. It’s super simple and if you aren’t feeling parfait-ish you can eat this pumpkin blend as some nice cream.
Here’s what goes in the pumpkin part, all blended together
1 – 2 frozen bananas
1/4 tsp cinnamon
1/4 tsp pumpkin purée
(I always add way more of the spices because I love me my spices.)
2 tablespoons honey, agave, maple syrup, or molasses
2/3 cup pumpkin purée
splash of vanilla extract
splash of any kind of milk
Add ins: Hemp powder, protein powder, chia seeds, walnuts, etc
Blend blend blend
So this next part is 100% customizable to whatever you’d like, this is what I put.
Layer 1: pumpkin mix
Layer 2: granola – you can use oats or museli even
Layer 3: greek yogurt
Layer 4: frozen blueberries, coconut shreds, pumpkin seeds, walnuts, peanut butter drizzle, chocolate chips, etc
Then repeat from layer 1 again. I like making this in a wide mouth mason jar. Once I get to the top I usually end with the pumpkin mix and a few toppings, I add a dollop of the greek yogurt to mimic whipped cream and sprinkle on more cinnamon and pumpkin spice. Then, you can pop this baby in the fridge overnight or eat right away and there you have it – yummy pumpkiny parfait. I had this and a side of apples and peanut butter. Amazing combo.
Speaking of combinations ..
Another amazing combination is rice cake and peanut butter with pumpkin seed toppings! OR top your rice cake with some yummy pumpkin purée.
The last thing I’ve tried (so far, this will not end!) Was a bagel with pumpkin purée and coconut shreds. That was lovely, I recommend sprinkling on some cinnamon and it’s just as good as cream cheese.
