I love smoothies, I love smoothie bowls, I love pumpkin and autumn and, well, I have a lot of pumpkin purée. Did I mention I love pumpkin? I decided to kick up the basic pumpkin smoothie and make the perfect combo of smoothie bowl toppings and pumpkin puree smoothie goodness. Here you will find a pumpkin smoothie recipe and some topping suggestions that are bound to rock your world.
I recently discovered Whole Foods and their bulk buy option. It’s the absolute best, and totally practical as a college student, especially because I have been trying out lots of different recipes and don’t want to overload on ingredients I won’t need later on. I did this with the pumpkin seeds I bought, a huge bag of them. I just realized I could’ve easily just bought under a pound at Whole Foods, but for now I’m stuck with an abundance of pumpkin seeds.
I especially love their granola options, and filling my own bag of different ingredients is awesome.
For this smoothie you’ll need:
1 frozen banana
1/2 cup greek yogurt
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
1/3 cup milk of choice
2/3 cup pumpkin puree
a handful of frozen strawberries
Now blend blend blend. I add less milk than I would in a normal smoothie, so that the smoothie is thicker to eat out of a bowl, but not too thick for it to become nice cream. You can add some ice cubes if you wish, I find that freezing my fruit does just fine as well.
Pumpkin seeds, shredded coconut, peanut butter, dark cacoa chips, cinnamon and pumpkin spice. Add whatever you wish on the top, even some granola! I also added a few walnuts afterwards. Smoothie bowls are incredibly easy, I really recommend trying your hand at many different recipes and loading up with those toppings!
